Paula Sheftel, the pioneer of Humphrey Yogart started it all in 1987. She
bought Humphrey Yogart and turned it into a legacy. When Paula took it
over the only yogurt offered was Tart. Paula added Sweet Vanilla, and
Chocolate non-fat frozen yogurt. In addition to that she added a variety
of Ice Creams, Vegan, & Low Carb Low Sugar options. She made it the
Legend it is today with over 50 blend-in options to customize your sweet
treats. The options and combinations are limitless. After working in the
store for over 34 years Paula passed the torch and retired from
Humphreys.

Today Humphreys is operated by Catherine Ellis, born in 1987, the year
it all started. Catherine worked with Paula at Humphrey’s from 2019-
2021. Catherine left Humphreys to go back to her roots in full-service
restaurants. While back in the restaurant business Catherine was called
by Matthew Gallagher the new owner of Humphrey’s Yogart to partner
with him and operate the store. Catherine could not pass up this

opportunity and eagerly signed on to keep the legacy of Humphrey’s
alive. Catherine is dedicated to keeping the quality that Paula created.
While the looks of the store have changed, the product has, and will not
change. She has added Catering to the reputation of Humphrey’s and is
growing that aspect of the business. Catherine hopes to open more
locations in the future as she feels everyone should have a Humphrey’s
treat!

Having the opportunity and pleasure to run this business is a blessing. It
is not work when you love what you do, and I love what I do. I am

fortunate to have not only a wonderful product and concept, but an
amazing team to keep it going. Here at Humphrey’s, we are committed
to providing excellent customer service, and unforgettable products. I
believe in what we do, and the products we create. I am grateful to Paula
& Jim for laying such a beautiful foundation. My hope is to grow the
business and make them proud.
